Around 997 BC, in the port city of Gaeta, located near Naples, the name pizza was first used in a letter from one of the feudal lords, although in the document this word appears, rather, as a designation ... for paying a tax to the head of the local church. Most likely, this particular letter was not about a piece of bread with cheese and vegetables, but about an obligatory monetary (or any other) penny. Perhaps the person who wrote this was simply mistaken, because the word “pizza” comes from the name “pizzo”, which means “swallow in one bite”, and also “pizza” is consonant with the name of bread from Greece “pitta”. The concept of pizza and the most popular modern recipes were finally formed in Naples in the 17th century. Thanks to the discovery of the New World, tomatoes were brought to Europe and tomato sauce began to be actively used as an additive to cheese cake. The new combination was liked by locals and became a popular food among Neapolitans. Neapolitan pizza traveled outside the city in the 19th century, when the first Neapolitan restaurants began to open in other cities. And at the end of the 19th century, the pizza recipe became known in other European countries and even in the United States.
